Nutrition and Wellness—
Dates of Course: August 7, 2014-December 16, 2014
Course Description—
Nutrition and Wellness is a one-semester course which provides the students with good nutrition principles for human physical and mental wellness. Discussions include wellness and food choices in today’s world, digestion and major nutrients, body size and weight management, physical fitness, sports nutrition, stress and fitness, and life-span nutrition.
Course Objectives—
1. Describe the expanding role and need for good Nutrition in Human physical and mental wellness
2. Identify and be able to apply good Nutrition and food safety information sources available
3. Outline the processes of digestion, absorption and metabolism and how major nutrients are processed in the body
4. Define basic components of Carbohydrates, Proteins, and Fats and what forms and functions that they have in human metabolism
5. Describe general function of Vitamins, Minerals, and Fluids and relate these to body health needs
6. Complete body size measurements and explain influences on weight management in today's world
7. Use a wellness and critical thinking approach to evaluate current weight control programs and body image influences
8. Identify the nutritional processes involved in physical fitness and stress
9. Discuss the relationship of nutrition to athletic performance and sports-related dietary supplements
10. Identify and apply wellness and nutrition principles throughout the human life cycle
11. Describe technology resources used to provide nutritional services
12. Identify food preparation techniques that conserve nutrients and maximize the nutritional content of foods.
13. Plan and evaluate various types of menus that meet the nutritional needs of persons
