At first making truffles can be difficult, but it is always rewarding at the end. A truffle is a simple dessert that can make an ordinary person seem like a professional baker. In reality, the truffle can be shaped to any form, but a little round ball is the typical form. Although all steps are essential in the process, the two most crucial are mixing the cream cheese with Oreo crumbs because the consistency and quickly covering each truffle with melted white chocolate due to time.

Mixing the cream cheese in the bowl with the Oreo crumbs is a critical moment in making truffles. The eight-ounce package of cream cheese needs to be at room temperature; otherwise, it will be difficult to mix with the crumbs. First pour the Oreo crumbs into a mixing bowl, but save about half a cup for the end. Once the cream cheese is in the bowl, begin kneading with hands until all the cheese has absorbed the Oreo crumbs. If too much cream cheese is combined in, then the consistency of the blend will not stick together when it is ready to be rolled into balls.Also, if it is not kneaded thoroughly, the consistency will be incorrect, leaving the dessert tasting too much like cream cheese. This is an extremely crucial process that has to be done as soon as the chocolate is completely melted and should be done in less than five minutes. If the truffle is not submerged quickly enough, the chocolate will harden in the bowl. Once the chocolate is solidified , if it is melted again, it will become thick, gooey, and clumpy which is the wrong consistency for covering it. Using a spoon, submerge the truffle into the melted white chocolate until it is fully covered. Scoop it out quickly, then place onto a wax paper lined cookie sheet. Time management is the key to this process to perfect tasting

    Whoever said life was going to be easy, the sooner everyone learns that the better off they will be. Life in itself is very stressful, but when you throw in being a wife, mother, student and employee it’s almost too much to bear. I have never realized how dirty and inconsiderate people really are and that makes my life stressful when I have to pick up after all them. Before you make it, you need to prepare some ingredient: 500gr Mascarpone cheese (approx. 1 lb.), 6 pasteurized eggs, 2 packages savoiardi lady fingers, 3 Tablespoons sugar, 2 shots Cognac or Brandy (2oz) ,6 cups coffee, espresso sized cups (about 8 oz), 4 Tablespoons powdered unsweetened cocoa. First, the preliminary steps: Bring all ingredients to room temperature. Make the espresso and poor it into shallow flat-bottomed bowl. Add one shot of cognac, one teaspoon cocoa, and allow to cool to room temperature. If at this point you've decided to use coffee instead of espresso, take the coffee you've made and drink it. Then make espresso. Separate egg yolks and whites. Second, mixing:i n the first mixing bowl, beat egg yolks and sugar until creamy white. Add mascarpone and 1 shot of cognac and mix until blended. Leave this mixture in the bowl. In the second mixing bowl, beat eggs whites until fluffy. If you use pasteurized eggs, this may take a while. Fold beaten egg whites into mascarpone mixture. Mix only enough to blend. Over mixing will deflate the egg whites. Quickly dip a savoiardi in the espresso bowl. To get the right amount of espresso on the savoiardi, lay the finger flat in the bottom of the bowl sugared side up and immediately pull it out. Place each finger flat in the bottom of the pan sugar side down. The savoiardi will quickly absorb the espresso. If you soak the savoiardi in the espresso you will end up with soggy savoiardi instead of moist savoiardi. And last but not least, assembly: Build a layer of dipped savoiardi across the bottom of the pan.
