Methodology

3.1 Materials and Equipments

The main ingredients to be used are the Saba bananas. There should be 15 pieces. (1 tumpok in the market) There should also be also 1 tbsp. salt, 5 cups of water for preparing the brine solution. Of course measuring cups/spoons, and basin are needed. Chopping board and knife would be used in slicing the bananas. We need solar dryer for drying the bananas, grinder or for grinding and making flour. A simple blender may also work for grinding. We also need strainer for sieving and sifting. Plastic bags or any other clean container will do for storage.

3.2 General Procedure

First, make sure that the materials and equipments are complete and clean. When the materials and equipments are complete and clean, start the procedures. Prepare the brine solution; 1 tbsp. salt to 5 cups of water. Wash the bananas and peel. Soak immediately in brine solution. After that, wash again to remove latex. Cut into halves and remove the seeds. Next, slice them longitudinally at ⅓ cm. thick. Then, dry in solar dryer for 8 to 10 hours. Make sure the bananas are hard solid. If they are already hard, grind the bananas 2 to 3 times or until very fine. Finally, pass through a fine sieve and separate the ungrounded bananas. You can sift the flour to make sure your flour is fine. Pack the flour in plastic bag or in other containers for storage.

You can test the product by any preparation or treatment you want. 15 pieces of bananas makes 2 cups of flour.

The researchers tested the product by making simple bread. The researchers used 2 cups of flour, 1 cup of water, 1 egg yolk, ¼ tsp. salt, and ½ tsp. sugar. The researchers baked it for 5 minutes with 300 degrees Fahrenheit and the product tastes
