The internal failure cost at the restaurant caused because of the slow services and undesirable food and its impact on customer satisfaction. The Case demonstrates that the Restaurant face an issue of the time maintains; where food preparation takes a long time. Typical time needed is 12 min to complete the meal, but sometimes it’s taking more than 20 min due the delay in the kitchen. This cause a slow in services and customer wait longer. This raises another issue which is restaurant design is not suitable for the customer who comes and order food “To Go”; where there no seats available and customer stand and wait. The capacity of the restaurant and employee is not meeting the customer number which raises; which led to an external failures cost. For instance, the waitress is overworked in the kitchen, and the customer is sitting and waiting thus makes customer feels ignored and it gives bad feedback.…

    Alebrije

My chosen restaurant is Alebrije. Since Alebrije is so close to multiple schools in the 19610 area, it can be said that the target market for Alebrije is the population of 19610 that is at (or almost at) the “young married with children” and all the way through those at the “older married” stage. It is beneficial for Alebrije to target the Generation X consumers, the baby boomers, and the families of heads of household that are over 55. The Generation X consumers are more likely than others to indulge themselves and baby boomers and families with heads of household over 55 are more able to afford spending fifty dollars per meal, than others are. Through its prices, it specifically targets middle class people since they are the only ones who can afford to spend tens of dollars on each specific item.…

Diversity is growing in every direction and it is apparent in the food industry. Barrows, C., Powers, T., & Reynolds, D. (2012), “One of the great factors accounting for the success of ethnic restaurants, for instance, is America’s already great diversity. The number and scope of ethnic dining options has increased dramatically in recent years, especially in smaller markets” (Ch. 2, pg. 44, para. 5). Because the world is becoming so diverse, we now have access to different foods and cuisines that we would not typically be able to get unless going to those specific countries. With diversity, the hospitality industry is growing more and more each year and all different types of cultures are being introduces, so the industry needs to learn how to adapt and handle the changes to be able to keep up with the demand as well.…

The scenario used and analysed here, for the purpose of this assignment, is a true scenario with true managerial issues, where I once found myself in, a long time ago, in the role of an employee: a traditional and well-known restaurant was facing issues against the great competition that had been formed through the previous year. The area where the Restaurant was located was a growing neighbourhood that was becoming each day more popular and populated. It was predictable to expect that the commerce in the area would develop and expand, but the establishment’s administration was not prepared for it and did not know how to properly handle the situation and how to use it in its behalf. The service offered by the Restaurant just continued to be the same as it always was. They believed that an already traditional establishment should not need to change to compete, that its own reputation should be enough to keep the old clientele coming and they trusted, as always, that the old clientele would bring new clientele by word of mouth. This new scenario could be and should be a great opportunity for the Restaurant to grow and to expand its capacity, its revenue and of course, its profit, but the way things were being handled there, the company was being led to the opposite direction. The incapacity and incompetence of the administration was dragging the establishment down and it would for sure end in bankruptcy in a matter of few months, if continued the way it was.…

The restaurant will focus on these categories because the restaurant industry in Muscat is divided in the above named segments. The behavioural segment focuses on the different tastes of the customer, trends, price and quality of food. The restaurant understands that some customers will visit the restaurant either because of the food, the trend to visit a new restaurant in the wave, and the affordable prices. The demographical segment represents the income factor (Thomas, 2007). As discussed above the Flower Lotus will focus on the middle income to high income earning residents. The prices will therefore be reasonable to these groups and they will be able to afford…
