Travel and Tourism: The Umbrella Industry
Travel and tourism industry: all of the businesses that provide products and/or services to the traveling public. It is comprised of 5 segments: lodging operations, food and beverage operations, transportations services, retail stores, and destination activities.
Food and beverage service is not merely one major segment; it is also an important part of each other segment of travel and tourism industry.
The Hospitality Segment
Te hospitality industry comprises two segments: Lodging operations – hotels, motels, resorts, casinos, and other facilities offering sleeping accommodations –, food and beverage operations – restaurants, hotels, bars, taverns –.
- Not only to tourist, they are serving for local residents also.
- Food and beverage operations are crucial to the world of hospitality, travel, and tourism.
There are 2 basic categories of food and beverage operations:
1.Commercial food service operations: food service operations found in lodging properties, clubs, restaurants, and other business; these operations exist to make a profit from the sale of food and beverage products.
2.noncommercial food service operations: organizations such as schools, nursing homes, hospitals, and military services that are nonprofit and exist primarily for reasons other than to provide food or lodging services. This service is also divide in 2.
Self-operated food services are those managed by the organization that offers them, operates its own food services.
Contract management company: a for profit company tat operates food services for a noncommercial organizations. (Sodexo)
- Noncommercial facility may not want to generate a profit from food sales, it would want to minimize the expenses of the food service program.
