Potato flakes and flour are used as potato substitute in confectionery and processing industries to make potato snacks, potato chips, mashed potato and potato pie to name just a few. Potato starch is widely used in paper and textile industries. Starch is also used as stabilizer, binder, filler, texture and gelling agent. Potato dehydrated products are lightweight, easy to transport and require less storage space. Maximum shelf-life is around 18-24 months.
Note: This feasibility report is only for potato flour and flakes.

PROCESS:
• • • • • Production process involves washing, peeling, cutting, blanching, cooling, cooking and drying of raw potatoes. Yield ratio of raw potatoes to flakes or flour is approximately 5.7:1. Higher recovery ratio of flakes and flour is from fresh potatoes and lower recovery ratio from stored potatoes Re-hydration ratio of flakes to mash potato is 1:5. Potatoes with high solid contents and low sugar are best to produce dehydrated products. These types of potatoes are widely available in Pakistan.

The purpose of this lab was to determine the solute concentration of Solanum tuberosum by calculating the percent change in mass of pieces of Yellow Flesh Potatoes in 0.0M, 0.2M. 0.4M, 0.6M, 0.8M and 1.0M sucrose solutions. An error was made in the procedure when creating the intended sucrose solutions of 0.0M, 0.2M. 0.4M, 0.6M, 0.8M, 1.0M and it created actual sucrose solutions of 0.0M, 0.188M. 0.355M, 0.505M, 0.639M, and 0.755M. The actual sucrose solution and percent change in mass were graphed and a linear regression equation was generated. With this linear regression, the solute concentration of S. tuberosum was determined to be 0.173 M. It was hypothesized that the solute concentration of a potato is determined when there is no net…

Firstly we collected the equipment. This included a scalpel, potato cutter, and test tubes. Then we cut the potato using the potato cutter into cylinders. Then we used the scalpel to cut each potato strip down to size. To get each strip as close as possible the same length and width we used a ruler get correct measurements. Then we filled one test tube with distilled water and another 5 with different sugar solutions in increasing strength of molar, starting with 0.2 molar. After that we dropped our potato strips into each test tube at the same time and let them sit for 28 hours and 30 minutes. We poured the solutions out to get the potato strips. Then we carried them one by one over to the scales. We then weighed them to see if they had gained or lost weight. Once we had the results we calculated the percentage weight gained or lost.…
