A. Background of the Study
Today, the abundance of unhealthy foods all around us is alarming. Everywhere we look we see all of these junk foods loaded with salt and monosodium glutamate and other unhealthy components. Obesity rates are increasing, especially with the youth. According to a recent survey by the National Statistics Coordination Board (NSCB) as of 2008 showed that 26.6% of Filipino adults are overweight, higher than 16.6% in 1993. Among children aged 5 to 10 years old, 6.6% are overweight against only 5.8% during the last survey in 2003. Obese people, meanwhile, are more prone to non-communicable diseases (NCDs) such as diabetes, heart disease and stroke, said Dr. Tony Dans of the Philippine General Hospital. Using the waist-to-hip ratio, Dans said "a third of Filipinos are obese and at risk of heart disease." These facts have led us to perform research on healthy substances that we can use to substitute some of the unhealthy parts of the food we eat. It has been proven by a lot of researches that the leaves Moringa oleifera are very nutritious. It has been called “the miracle tree” by some specialists because of its abundance in nutrients and healthy components like vitamins. Moringa plant is one of the richest sources of Vitamins. Moringa has Vitamin A (Beta Carotene), Vitamin B1 (Thiamine), Vitamin B2 (Riboflavin), Vitamin B3 (Niacin), Vitamin B6 Pyrodixine), Vitamin B7 (Biotin), Vitamin C (Ascorbic Acid), Vitamin D (Cholecalciferol), Vitamin E (Tocopherol) and Vitamin K, Calcium, Copper, Iron, Potassium, Magnesium, Manganese and Zinc. Moringa has 17 times more Calcium than that of milk, Moringa, with 25 times more Iron than that of Spinach, 15 times the potassium in banana assists in the regulation of the acid-base and water balance in the blood and the body tissues. It assists in protein synthesis of amino acids and in carbohydrate metabolism. It has been scientifically proven from time and time again that Moringa oleifera has multiple health benefits. It is very healthy for our bodies. Among these are antioxidant Properties that boost your Immune System, and decreases the risk of high blood pressure and diabetes. It has also been proven that Moringa oleifera leaves are even more nutritious and healthier when they are dried and put in powder form. When in this powder form, the Moringa oleifera leaves can be added into a lot of our common everyday recipes to promote healthier intake of vitamins and nutrients.
B. Statement of the Objectives
Our study aims to improve common fan favorite snacks like soft cookies, by integrating into it a healthy ingredient, malunggay leaf powder. We would like to test the feasibility of this ingredient in soft cookies, and try to see if it would be well received by the general populous. Through these efforts, we would like to persuade the people today to consume healthier and more nutritious food. Consequently, we would like to be able to promote awareness on the amounts of unhealthy components on common snacks and commercially sold food products while promoting use of healthy ingredients and substitutes like moringa leaf powder C. Significance of the Study
We would like to study the health benefits and the feasibility of Moringa oleifera as a key ingredient in the making of soft cookies. The healthy properties of Moringa oleifera will provide our bodies with much needed nutrients and vitamins and minerals that it lacks, because of the high amount of unhealthy substances today’s unhealthy foods have. These healthy vitamins and minerals will help produce a healthier population. D. Scope and Limitations
This is the researchers’ first time in creating Moringa oleifera leaf powder so a perfect initial procedure is not to be expected. Our survey will not involve a large sample size, so results may vary across different samples if the study is to be repeated.
