Mexico’s eating habits and meal patterns differ significantly from those of Americans. Breakfast is between seven and ten; common foods are sweet breads, fruit, toast, and granola. Lunch is the meal of the day unlike in American where dinner is. Lunch normally takes place between one and four, it is used as the family meal. It consists of an appetizer, soup or salad, the main course: meat, rice and beans, and tortillas. For dinner they tend to eat lighter food items. Some dinner examples would be simple soups or al a carte items such as tacos. In Mexico, they use many different cooking methods. One cooking method is Barbacoa, it consists of steaming and smoking the meat, adding aroma and moisture to the meat, and is referred to slowly cooked meat. Mexican food is high in calories, and fatty. The rise of obesity is leading to higher risk for diabetes and cardiovascular illnesses are. With Mexican food being so high it fat, there are many risks attached like: increased cancer risk, obesity, stroke, heart disease, and diabetes. The Mexican diet is also high in sodium which can lead to even more health risks. These risks include high blood pressure, ventricular hypertrophy and heart failure, osteoporosis, kidney stones, dehydration, breathing difficulties, duodenal and gastric ulcers, electrolyte and hormonal imbalance. Although the diet has a lot of negative aspects, one great thing is that it is a diet that is very high in fiber. Since beans are one of the main foods used, fiber is one factor that brings many benefits to the Mexican culture. These benefits include blood sugar control, lower risk of heart disease and stroke, healthier skin, helps with weight loss and management, reduce risk of kidney stones, and bring relief for irritable bowel

    Growing up in a Mexican household meant food, all the time. When I think back as far as I can remember, there isn’t a moment I recall that my grandma was not steady stirring up something in the kitchen. Waking up at the crack of dawn to prepare breakfast was a breeze for her, and for a traditional Mexican household it is nothing out of the ordinary. Tortillas, the number one staple food in Mexico, were created daily, and usually the preparation for lunch or dinner continued as soon as breakfast had finished. It is embedded in the Mexican culture for the women to be responsible in keeping a home together; with the preparation of fresh meals, and large meals at that, it allows families to come together each day and form a bond. Food was, and is, used as a means of non-verbal communication; and the dishes prepared are just as unique as the person preparing them. When guests came over to visit, that only meant more food to be cooked, and more delicious snacks to be enjoyed. Abuelas (grandmas) are notorious for cooking the best of the best when a visitor is present, even if that visitor is a five-year-old grandchild. It’s a way of conveying respect to that individual, in addition to ensuring they are not hungry, thirsty, or uncomfortable. For the Mexican wife of the household, every detail is important. The entire home is a symbol of what you represent: from the cleanliness of your home, to the delectable of your food, and even the obedience of your children. This is what I feel was important to the mothers, aunts, and grandmas I grew up around. At the end of the day, the woman was judged based on the complete infrastructure of her home.…
