The Effect of Osmosis on Potatoes/ Diffusion of Molecules through Benedicts Test of Dialysis dubing

Introduction The focus of the lab on September 16, 2013 was Diffusion and Osmosis. Osmosis is a process in which the molecules of a solvent diffuse from an area of high concentration to an area of lower concentration, through a semipermeable membrane. Small solute molecules and water molecules can move freely through a selectively permeable membrane, but large molecules may pass through more slowly, or not at all.
During this experiment we measured the diffusion of small molecules through dialysis tubing. We used the I2K1 because it is small enough to diffuse and the starch is too large to diffuse out. By detecting the presence of particular molecules on each side of the dialysis tubing, we determined which molecules passed through the tubing and which did not. When the starch molecules react with iodine to form a dark blue compound. We used the I2K1 to test for starch and the Benedicts test to test for reducing sugar. Based on the information my hypothesis for this experiment is that the water and the iodine would diffuse through, because of their size and polarity.
Also in the lab on September 16, 2013 we discussed the effect of Osmosis on potatoes. Osmosis is a process in which the molecules of a solvent diffuse from an area of high concentration to an area of lower concentration, through a semipermeable membrane. We put the potatoes in different solutions with a different amount of sucrose in each solution, starting from 0.0 to 0.6. My hypothesis was that in from the 0.0 to 0.3 the weight of the potatoes will shrink and from 0.4 to 0.6 the potatoes will grow. If the potatoes absorb the sucrose and gain weight then they are hypotonic. But if the potatoes shrink then they are hypertonic. If they don’t change in size at all they are isotonic.

    Osmosis is the movement of water molecules from high concentration to low concentration through semipermeable membranes, caused by the difference in concentrations on the two sides of a membrane (Rbowen, L.). It occurs in both animals and plants cells. In human bodies, the process of osmosis is primarily found in the kidneys, in the glomerulus. In plants, osmosis is carried out everywhere within the cells of the plant (World Book, 1997). This can be shown by an experiment with potato and glucose/salt solution. The experiment requires putting a piece (or more) of potatoes into glucose or salt solution to see the result of osmosis (a hypertonic type of solution is mostly used as it would give the most prominent visual prove of osmosis, as was mentioned in an observation of an experiment). As the potatoes are left in the solution, water molecules from the potatoes would move out through the semipermeable membranes to the hypertonic solution surrounding it in an attempt to equalise the amount of glucose/salt within the solution to the same amount that the potatoes have. This would result in the potatoes’ cells shrinking-when the fluid left the vacuole, and the cytoplasm also being pulled away from the cell wall by the vacuole (dragging the cell wall in, too) in the process of plasmolysis-and the entire potatoes piece shrink, becoming soft and flaccid; as it was osmosis & the fluid in the vacuole that helped it keep its turgid shape and feel of density and stiffness in the first place (Bradley, O., 2006).     Osmosis is the movement of water from an area of high concentration to an area of low concentration across a semi permeable membrane. An osmotic system is established when a semi-permeable membrane is placed between two solutions. In this biological systems context, osmosis is the exchange of water between the potato cell and the surrounding medium of varying sucrose concentrated solutions, with the plasma membrane being the semi- permeable membrane. Because water molecules have kinetic energy, they are constantly moving around in gaseous or liquid form, moving randomly from one place or another. The greater the concentration of water molecules in a system or solution, the greater the total kinetic energy, and the higher its water potential. This means, that as the concentration of glucose increases in a solution, the concentration of water decreases, lessening the solution's water potential, and lessening its ability to move between solutions by osmosis. Relating this to the potato chips: basically, as the concentration of glucose in each solution increases, the water in that solution is less able to move to the potato as there is a higher concentration of water in the potato chip than in the highly concentrated sucrose solution, causing water from the potato to move to the solution, thereby achieving a percentage loss in mass. At concentrations such as 0.0molL-1 and 0.9molL-1, the concentration gradient is steeper; therefore the rate of diffusion is quicker. For the potato chips in the hypertonic 0.9 sucrose solution, the concentration of water molecules in the potato chip cells is greater than the water molecules in the 0.9 sucrose solution. This means that through the process of osmosis, water molecules will move from the potato cell through its semi permeable membrane and into the sucrose solution, therefore resulting in a percentage loss in mass of the potato chips as depicted by my results (a loss of XXX%), thereby justifying why the potato chips in the 0.9…
