2.5 Food Safety Work File

Directions: Complete the food safety interactive quiz. Use the information from the interactive quiz to complete the following responses regarding food safety practices.

For each of the following food safety practices, share at least 2 statements from the interactive quiz. Be sure to put these statements in your own words and explain why they are helpful in preventing food borne illness. An example would be: When dining from a buffet, make sure hot food is hot and cold food is cold. Food that is 40 – 140 degrees Fahrenheit has already begun to grow bacteria and pathogens.

Clean (16 points):
1.Make sure you wash your hands after touching fish or raw meat, this will lower your chances for getting food borne illness.

2. If food is left on the counter for more then 20 minutes you should throw the food away.

Separate (16 points):
1. Make sure you don't cross-contaminant raw meat, seafood etc with something that is about to be eaten.

2. Make sure you have different containers for different types of food.

Cook (16 points):
1. Make sure you use a food thermometer to tell if the food is safe to eat or not.
2. Always cook on a clean surface.

Chill (16 points):
1.When packing a refrigerated lunch make sure there is a special icepack to keep the food safe.

2. Make sure you freeze all of your food at 0 degrees F.

In your own kitchen, explain 2 food safety practices you feel your family can improve and 2 food safety practices you feel your family does well. (16 points)
In our kitchen or outside on the grill my family does not really cook our meat right. We never test the meat with a thermometer to see the temperature. Another thing my family can work on is cleaning the cutting board after we cut meat on it. Things that my family does well is separate the different foods in different containers. Another thing we do well is when we finish eating we put stuff away quickly and don't leave stuff

We would like the system to be so comprehensive and appealing that others are encouraged to use it as a model. Our vision will become a reality only when the government, food industry, service providers, educational and research organisations and the consumers collectively commit to work together and apply sound principles of food safety based on science and research. We have begun the process by promoting a positive food safety culture among food establishments in the Emirate, by urging the management to be responsible and accountable through our proprietary Person In-Charge (PIC) program, which we introduced in 2010. The responsibility is not only with the PIC but also with other food handlers in the establishments, their owners, regulators and also the consumers. In other words, it must be stressed that food safety is a shared responsibility involving all the residents of the Emirate. Through the Food Code, we are now building on the foundations laid by the PIC and other regulatory programs, which arm them with the necessary knowledge about the systems and processes needed to ensure an effective food safety culture. An integrated approach is necessary to ensure food safety from the place of primary production up to the point of consumption. The Food Control Department of Dubai Municipality will ensure that regulatory programs are science- and risk-based as far as possible. The Food Code is designed to assist the Person In-Charge (PICs) at food establishments to understand their obligations and to carry out operations as per the requirement.
