The Breakfast Omelet Fit for a Keto King (or Queen)

Makes 4 servings

You Will Need:
• 4 large eggs
• 4 large egg whites
• 2 red tomatoes, minced
• 4 garlic cloves, minced
• 1 cup grated cheddar cheese
• 2 cups coconut milk
• 2 cups canned tuna in oil, drained and chopped
• 1/2 cup shredded cabbage
• 1/2 cup chopped tomato
• Olive oil, as needed
• Sea salt, to taste
• Freshly ground black pepper, to taste

How to Prepare:
1. Beat the eggs and egg whites in a large bowl, then whisk in the coconut milk. Season with a pinch of salt and pepper.
2. Place a large heavy bottom skillet over medium flame and pour just enough olive oil to coat the bottom. Saute the onion until tender, then stir in the garlic until fragrant.
