In fermentation industry, various commercial products of important economic value made by microorganisms are (1) pharmaceuticals, including antibiotics, steroids, human protein, vaccines, and vitamins; (2) organic acids; (3) amino acids; (4) enzymes; (5) organic solvents; and (6) synthetic fuels.     The two types of fermentation that are well known are alcoholic fermentation as well as lactic acid fermentation. Fermentation is vital for many organisms, such as yeast and bacteria, because it allows them to obtain energy required to carry on life processes. Alcoholic fermentation is especially important for human beings, as it is used to produce alcoholic beverages, bread, and many other everyday items that are consumed (Alba-Lois, 2010). On the other hand, lactic acid is a waste product of certain bacteria (Lactobacillales), which is utilized to create many dairy products such as yogurt and cheese. In addition, humans can resort to lactic acid fermentation when oxygen is limited, so it is used as an extra source to obtain oxygen. In our experiment we will be using yeast, a single-celled organism that utilizes sugar as a food source, and it produces energy substances through the breakdown of sugar molecules. Specifically, the type of sugar as a source of food, impacts the speed of fermentation in yeast. In this lab, we will calculate the rate of fermentation in yeast with different solutions of sugar, such as sucrose, fructose, and lactose with glucose being the control. During the infant years of cheese production old milk was let to break down by the naturally occurring bacteria in the milk. The lactose in the milk was slowly broken down into lactic acid, forming the separation of whey and curd.     The production of acetone and butanol by means of solvent-producing strains of Clostridium spp. was one of the first large-scale industrial fermentation processes to be developed,and during the first part of this century it ranked second in importance only to ethanol fermentation. Higher grade logs leave Treetop's sawmill department in finished form and are sent directly to the packaging department. The remaining 40 percent of sawmill output are cuts from lower grade logs, requiring further work by the planing department. Treetop has a general manager, 16 supervisors and support staff, and 180 unionized employees. The unionized employees are paid an hourly rate specified in the collective bargaining agreement, whereas management and support staff are paid a monthly salary. The mill is divided into six operating departments: boom, sawmill; planer, packaging, shipping, and maintenance. The sawmill, boom, and packaging departments operate a morning shift starting at 6 A.M.and an afternoon shift starting at 2 P.M.Employees in these departments rotate shifts every two weeks. The planer and shipping departments operate only morning shifts. Maintenance employees work the ~ght shift (starting cat 10 P.M.).
