I.- INTRODUCCION

Entre las tecnologías aplicables a la restauración, la tecnología del vacío hizo su aparición hace relativamente poco tiempo como método de cocción y ya no sólo de conservación.

El envasado al vacío es una técnica o sistema de conservación de los alimentos, estos pueden ser tanto crudos como cocidos. La técnica consiste en extraer el aire de la bolsa para envasar al vacío que contiene el producto, fundamentalmente el oxígeno que es el primer factor responsable de la oxidación y putrefacción de los alimentos. Para esto se utilizan diferentes equipos y materiales.

Objetivos
• Evaluar los cambios fisicoquímicos, microbiológicos y sensoriales en un determinado tiempo de almacenamiento de papas pre-fritas congeladas envasado al vacío.
• Determinar el efecto del envase al vacío para la conservación de papas pre-fritas.
• Encontrar el tiempo de vida útil de la papa pre-frita envasado al vacío.

II. REVISION LITERARIA

2.1 VIDA EN ANAQUEL El Institute of Food Technologists (1FT) de los EE.UU, define la vida en anaquel de un producto como: "El período entre la manufactura y venta al por menor de un producto alimenticio durante el cual el producto tiene una calidad satisfactoria" (Dethmers, 1979).
