Introduction Ever wondered why candies are different colors? Ever wondered why candies are different colors? Many candies contain colored dyes. Bags of M&Ms or Skittles contain candies of various colors. The labels tell us the names of the dyes used in the candies. But which dyes are used in which candies? We can answer this by dissolving the dyes out of the candies and separating them using a method called chromatography. Research
Candy Chromatography is the method of analysis of separating and comparing dyes used in candies and food coloring. It is also a proven method to analyze candy and its complex structure, without having to taste it. These complex mixtures can be separated back into pure substances. To find out the ingredients of a favorite candy, chromatography would help to define every ingredient found in the candy sample. The word chromatography is derived from the two Greek words, “Chroma” meaning color and “graphic” meaning to write. Paper chromatography is the best method of separation used in candy chromatography. Paper chromatography is a technique that involves placing a small dot or line of sample solution onto a strip of chromatography paper.. The paper is placed in a jar containing a shallow layer of solvent and sealed. As the solvent rises through the paper, it meets the sample mixture, which starts to travel up the paper with the solvent. This paper is made of cellulose, a polar substance, and the compounds within the mixture travel farther if they are non-polar. More polar substances bond with the cellulose paper more quickly, and therefore do not travel as far.
Hypothesis
The same color candies will have the same colored dyes which are used in making the candy. For example, the green skittle will have a green colored dye used in order to make the skittle.

Experiment Materials 1. M&M or Skittle Candies (1 of each color) 2. Coffee filter paper 3. A tall

In the NPR Heath segment titled “FDA Probes Link Between Food Dyes”, Michael Jacobson, director of the Center of Science in the Public Interest, says,”Food dyes are simply added to make the food fun. They serve no purpose whatsoever.”The text also states “Red 40 dye may cause symptoms of hypersensitivity in some people, including swelling (specifically around the mouth) and hives. While most popular candy companies use food dye with lots of harmful chemicals, such as benzene, a known carcinogen in Red 40 and Yellow 5 and 6. According they could use natural coloring. For example, instead of using Red 40 dye in Strawberry and Cherry Twizzlers®, the company could use the vibrant red coloring of beets. Trust me, they stain quite well. The company could also use raspberries as a red food dye. Thankfully, these natural food dyes do not interfere with the taste. As referred to Picture 1, the Onion Skin Dye made the dye bath turn into a light yellow color; However, this color did not look like the color of the onion skin. The prefix “chroma,” which suggests “color,” comes from the fact that some of the earliest applications of chromatography were to separate components of the green pigment, chlorophyll. You may have already used this method to separate the colored components in ink. In this experiment you will use chromatography to separate and identify amino acids, the building blocks of proteins. The proteins of all living things are composed of 20 different amino acids, some of which are described below. Chromatography is partially characterized by the medium on which the separation occurs. Stationary phases that are typically used include paper (as in this experiment), thin plates coated with silica gel or alumina, or columns packed with the same substances. The “mobile phase” is the medium that accompanies the analyzed substance as it moves through the stationary phase. Both liquids and gases can be used as mobile phases depending on the type of separation desired. To refer to gas or liquid chromatography, chemists often use the abbreviations GC or LC, respectively. These abbreviations explicitly identify the phase of matter of the mobile phase. The term “paper chromatography” used in this experiment’s title identifies the composition of the stationary phase. The compositions of the stationary and mobile phases define a specific chromatographic method. Indeed, many different combinations are possible.
