Trans-theoretical model does apply really well for seniors, who are willing to change their eating behavior. You provided interesting information for seniors to consume more fruits and vegetables that would reduce the risk for chronic diseases.
I agree that it would be difficult to recruit more participants, especially seniors for this kind of program. The conference room would also be an important factor for delivering such a message to look for behavioral change.
