February 2012; CASSAVA LEAVES AS NUTRITIOUS AND NATURAL EXTENDER
TO MEAT.
Adviser: Mr. Ross Bisarez
A growing fear for food shortage especially in developing countries like the Philippines as a consequence of a continuous rise in population and the unremitting inflation of prices of basic commodities has always been there. In view of this, it is important to develop other food sources that are easily available and affordable without sacrificing its nutritive value.
This study was conducted to establish the following – 1) the phytochemical - nutritive and antinutritive composition of cassava leaves through research; 2) the degree of acceptability of cassava leaves as a nutritious and natural extender to meat; and 3) the affordability of cassava leaf products in terms of cost.
Younger cassava leaves were gathered, washed and air-dried. Processed cassava leaves were mixed with other ingredients to determine the effectiveness of cassava leaves as nutritious and natural extender to meat. A 50 – 50% formulation with the earlier composed of cassava leaves and the latter using pure beef mixture.
The 9-point Hedonic Scale was used to evaluate the degree of acceptability of cassava leaves as a nutritious and natural extender to food in terms taste, texture and appearance. Using random sampling, inexperienced respondents were invited to a food tasting activity to establish its acceptability.
Research from existing literature, studies and experiments showed the presence of alkaloids, flavonoids, tannins, cardiac glycosides, anthraquinone, phlobatinnins, saponins and anthrocyanosides. Vitamins A, C and E and minerals, namely, calcium, magnesium,

Vegetarianism has been around since the beginning of mankind, however as society has progressed so have plant based diets. Today the term plant based diet can be confusing because of the varying levels of animal consumption in an individual’s diet. The first definitions that will be examined are plant based foods and an omnivorous diet. Plant based foods are those foods which consist of “…fruit[s] and vegetables, nuts, natural vegetable oils, and whole grains…” (“sharecare”) An omnivorous diet is one which is based on the consumption of both animal products (red meat, poultry, fish, etc.) and plant foods. Due to the fact that plant based diets have changed and now incorporate varying levels of animal consumption there is a need to define the levels so that confusion can be avoided. The four categories of plant based diets are ovo-lacto vegetarianism,…

    Ethiopian Food and Health

Nutrition is the key to a healthy life and the cornerstone of any culture’s cooking. If our food lacks nutrition, we get sick and inevitably parish. This discussion will examine the food types indigenous to a very misunderstood country in Eastern Africa: Ethiopia. Boasting diverse landscapes filled with rolling hills, great rivers and majestic wild life, Ethiopia is the site of many of the most ancient and famed human fossils ever discovered, and as the world’s oldest surviving continuously-sovereign nation state, is rich in tradition and cuisine. Sadly however, most Americans today associate the country primarily with the devastating famine that ravaged its people in the mid-eighties. When I tell someone I am going to an Ethiopian restaurant, I often get a response like, “I thought they don’t have food”, as if for thousands of years the inhabitants of this bountiful country, who filled it with ancient, world-renown monuments, churches and cities, were bereft of sustenance. The idea is absurd, but most of the people who make such statements had their views shaped by media images of famine victims and so have given little thought to the customary dishes of their land. In the following passages I will endeavor to expose my audience to the cornucopia of creative culinary combinations comprising Ethiopian cuisine and to research providing evidence that the traditional Ethiopian diet meets nutritional requirements and ensures overall health.…

Cassava is classified as sweet or bitter. Like other roots and tubers, cassava contains antinutritional factors and toxins.[6] It must be properly prepared before consumption. Improper preparation of cassava can leave enough residual cyanide to cause acute cyanide intoxication and goiters, and may even cause ataxia or partial paralysis.[7] Nevertheless, farmers often prefer the bitter varieties because they deter pests, animals, and thieves.[8] The more-toxic varieties of cassava are a fall-back resource (a "food security crop") in times of famine in some places.[9]…

Today’s Cassava is extensively cultivated as an annual crop in tropical and subtropical regions for its edible starchy tuberous root. It also serves as a major source of carbohydrates. The people that use and grow cassava in today’s society first boil and shed the root of its skin, whereas the pre-Colombian era just boiled and used cassava with the outer layer still intact. This is remarkable because the outer…
