In Mexico there are a lot of famous dishes, but some of them don't have a history behind them. Well in this case mole actually has a history to show. Here you will know how the famous dish of mole started, the different kinds of mole and how you prepare mole.

Many years ago in the city puebla mexico the famous dish of mole was created. Mole was created by nuns to welcome the archbishop. The nuns didn't have any food to welcome the archbishop they were so desperate they wouldn't find something to feed the archbishop. They started praying to the angels so they would give them an idea or inspire them to invent something. Finally an angel inspire them to gather roast and mix different kinds of chilies as well as some spices,bread, nuts and a small piece of chocolate and some other 20 ingredients. All of the ingredients were set to fire to boil and waited for it to become thick, and sweet sauce. The nuns only had one kind of meat an old turkey, they decide to kill to serve the mole sauce over it. They didn't know they were only creating a dish for the archbishop but also they were creating the mexican national dish for holidays and gatherings.

As time has passed 6 other kinds of mole have been invented sill using the original. Those kinds are mole negro, coloradito, verde, amarillo, rojo and chichilo. Mole negro is one of the more popular in america, this mole is a savory-sweet flavor. Mole coloradito got their name
