On the morning of day one of my food intake I skipped breakfast, but I drank one bottle of Dasani water, as a snack I ate ten pieces of Chips Ahoy chewy chocolate chip cookies, one bottle of Dasani water. In the afternoon I drank one bottle of Dasani water, ate four-teen pieces of Totino’s pepperoni pizza rolls, drank one can of Pepsi soda, and as a snack I had ten Ritz crackers with one low fat Horizon organic mozzarella string cheese. For Dinner I had drank one bottle of Dasani water, ate one tostada with beef, cheese, lettuce on top with one cup of Mexican rice, drank one can of Arizona iced tea with lemon flavor, and for dessert I ate one strawberry shortcake Skinny cow ice cream sandwich, with one bottle of Dasani water. Day two of my food intake for breakfast, I ate one cup of dry honey nut General Mills Cheerios, and drank one bottle of Dasani water. In the afternoon, I drank one bottle of Dasani water, ate one French bread pepperoni Stouffer’s pizza, and drank one can of Sprite soda. Later in the evening for dinner, I drank one bottle of Dasani water, ate one hot and spicy Schwan’s fillet chicken breast, with one-half cups of instant long grain white rice. For desert I drank two bottles of Dasani water, with one cup of movie theater butter flavor Secret popcorn. Day three of my food intake, I skipped breakfast, but I did drink two bottles of Dasani water. For lunch I drank two bottle of Dasani water, ate ten pieces of pretzels dipped in cheddar cheese, and drank Starbucks Grande mocha Frappuccino blended coffee, topped with whipped cream. For dinner, I drank one bottle of Dasani water, ate one taco, topped with ground beef, cheese, lettuce, four ounces of Mexican rice on the side, and drank one can of Pepsi soda.     Medifast claims to be a low calorie, low fat diet that many people have joined. The plan is based around high protein shakes, bars and soups. The most popular choice is the 5 and 1, which consists of 5 Medifast meals and 1 “lean and green” meal. The caloric intake claims to be somewhere between 800 and 1,000 calories per day; however, when I entered a daily diet sample into the Diet Analysis program, I found a significant difference. The sample recommended a Medifast ready to drink Dutch chocolate shake for breakfast. Mid morning, a suggestion of Medifast scrambled eggs with a dash of parsley. Lunch was the first half of the lean and green meal, suggesting six ounces of roasted turkey with one cup of steamed mustard greens topped with one teaspoon of olive oil and salt and pepper to taste. The mid afternoon snack was a Medifast strawberry creme shake blended with ice and water. The remaining portion of the lean and green meal was suggested for dinner and included Medifast’s cream of broccoli soup with one-half cup steamed broccoli added for texture. A night snack of a vanilla shake was also shown. Using the dietary recommendations in the dietary analysis program for me, this sample meal plan only provided me with 54% of the calorie intake, or 773.24 kcalories. With a RDI of a minimum of 1200 kcals, this diet is insufficient in meeting metabolic goals, thus requiring supplements to enhance metabolism. Also, the carbohydrate requirements were 54.98 g, when I have a recommendation of 160-231 g per day. The fat requirement of 32-55 g per day were also not met, only providing 17.85 g. The only energy nutrient requirement that was met, and actually exceeded, was the protein…

    Keeping up a behavior can be hard, “the motivation must come from within.” For the past 23 days I have been striving to change and succeed, by the 22nd of October, in two specific nutritional behavior goals. One of them was to intake at least 30 grams of fiber on weekdays and at least 25 grams on weekends. The other was to reduce my sodium intake by a quarter, on weekdays, of what it was per day and reduce it by an eighth on weekends. This preparation all started about a week before my 23 days of transformation. In the three beginning days I tracked my diet and found that my low fiber and high sodium consumptions were eye-opening problems. My average fiber intake per day rested at 21.18g, which was significantly lower than my goal of 38g per day. As this issue arose so did my awareness that multiple aspects of my health were at risk. For example, my low fiber intake could place me in danger of developing heart disease. Fiber nutrients reduce the chance of disease like heart disease, diabetes, and many other frightful illnesses. In addition, foods that consist of fiber provide a feeling of fullness without additional calories being added to a diet. As for my Sodium intake, I was recommended a target of 1500mg a day but I was actually devouring a skyrocketing 3959.4mg a day. Without thinking twice I knew I had to make significant behavior changes. Concerning my towering sodium intake, I found that high sodium consumption makes the body preserve more water, which can raise the blood volume and, in turn, increase blood pressure. Considering my high blood pressure it would be essential and crucial to lower my sodium intake. Fortunately, the data collected demonstrated that the amount of sodium I have been taking in each day has been playing a role in my elevated blood pressure.     After calculating, this meal came to 225 grams of carbohydrates. It was enough to keep my blood sugars regulated without feeling overly stuffed. For lunch, if I am being completely honest, I did not take my blood sugars. I figured since I was feeling fine and well, I was hungry that I would be okay skipping one reading and/or dose of insulin. I prepared myself another 75 gram carbohydrate meal that included one turkey sandwich with mustard, one cup of my leftover chili with beans, six saltine crackers, a few raw pieces of broccoli, and a diet Pepsi. For once in my diabetic experience, I actually felt like I was eating normal food that I liked. The only issue I had with this meal was the diet Pepsi. As mentioned earlier, I live for coffee and carbonated beverages. Pepsi is favorite drink and if it were not so unhealthy, I would drink it more than I currently do.
