Experiment 2: Synthesis of Isoamyl Acetate (Banana Flavor)

Abstract: The purpose of this experiment was to synthesize isoamyl acetate via an esterification reaction between acetic acid and isoamyl alcohol, using concentrated sulfuric acid as a catalyst. The product was washed with sodium hydrogen carbonate, as well as with water, and then dried with anhydrous sodium sulfate. The percent yield of isoamyl acetate was 52.79%. The product was isolated using a combination of techniques – acid-base extraction, drying, and in special cases distillation.
Introduction:
The importance of banana oil as an artificial flavoring in the food industry is immense. Synthetic banana flavorings can be used as a substitute for natural banana flavoring in the event that banana tree crops are damaged or in limited supply. It is important that the artificial banana flavoring be synthesized in such a way that the product has a high level purity. Specifically, the isoamyl acetate product must contain less than 10% isoamyl alcohol and less than 2% acetic acid. Isoamyl alcohol in the product is tolerated up to 10%, since alcohol is a component of natural banana extract. Any more than 2% acetic acid in the product would degrade the flavor of the liquor. Fischer esterification is a process whereby an este r is prepared, and involves heating a carboxylic acid with an alcohol in the presence of an acid catalyst, which is used to expedite the reaction. In this experiment, this process was used to synthesize isopentyl acetate by combining isopentyl alcohol, which was the limiting reagent, with sulfuric acid (which acted as a catalyst) and excess acetic acid. Had equal amounts of acetic acid and isopentyl alcohol been used, approximately only two-thirds of each would be converted to acetate. Using excess acetic acid shifted the equilibrium

    We placed the zinc inside the beaker and slowly poured the hydrochloric acid into the beaker. As soon as the acid entered the beaker, there was a sizzling sound and bubbles started to form as we add more of the substance in. The alcohol is the limiting reactant, so it should be weighed/ the acids can be measured by volume. The esterification reaction is reversible, and it has an equilibrium constant of approximately 4.2. A pure component can be obtained from a mixture by separating it from all other components of the mixture, using procedures that take advantage of differences in solubility, boiling points, acid-base properties, and other characteristics of the components. Because isopentyl acetate is a liquid, the separation and purification operations will differ from those used previously for solid products. The water that forms during the reaction will be separated from the ester along with the wash liquids. Any traces of water that remain are then removed by a drying agent, either magnesium sulfate or sodium sulfate. Because isopentyl alcohol has a lower boiling point than that of isopentyl acetate, and the by-products have higher boiling points, it should be possible- in principle- to remove the alcohol and by-products from the ester by distillation.
