The article “Experts: Discard flooded fruits, vegetables,” by the LSU AgCenter is an article about the effects of floodwaters on fruits and vegetables. Wenqing Xu, a food safety expert at the LSU AgCenter, warns about the dangers of produce after floods. Edible parts of plants should immediately be discarded. Research, conducted by Melanie Lewis, also shows that pathogens can survive for at least 72 hours, after a flood, on the outer layer of some fruits. Other plants that grow underground should also be destroyed. The FDA has guidelines for handling flooded produce meant to be consumed raw. But no guidelines if you plan on cooking the produce. Since there is not enough research to prove that cooking produce will completely kill bacteria.
