Introduction

Background of the Study

More wheat flour is produced than any other flour. Wheat flour is the basic and most popular flour in the world. It is known for its good taste and nutritional value. Wheat flour nowadays is getting improved. Many of us are taking up a light and healthy diet which includes wheat bread. There are only little amount of vitamins and minerals found in wheat bread. That is the reason why the researchers came up with the idea of making healthier and more affordable flour. Flour made from a local and healthy fruit, the banana. It contains many vitamins and minerals like Vitamin B6, Vitamin C, and potassium. It also has lower carbohydrate content than wheat flour. It is good for those who have a light and healthy diet. Flour from banana contains low gluten. It can be used to produce high quality cakes by mixing with wheat flour. It can also be used for feeding infants. Studies also show that bananas can help reduce depression. Bananas contain tryptophan, an amino acid that can be converted to serotonin, leading to improved mood. Bananas also helps in the reduction of anemia risk because bananas are relatively high in iron, which helps the body's hemoglobin function. They also reduce the risk of heartburn because they have a natural antacid effect in the body. Bananas can also help people trying to give up smoking. They contain vitamins B6 and B12, as well as potassium and magnesium. These substances help the body recover from the effects of nicotine withdrawal. Bananas are high in B vitamins that have been shows to improve nerve function.

Statement of the Problem

Many people suffer eating other alternative yet not so nutritious food. Also, other people who take up a light diet do not get all the vitamins and minerals their body needs. Another thing is that some people are not contented with the taste and quality of their food made with flour such as bread and cakes. Some parents also find feeding their babies difficult. That’s why the researcher have come up to this study. It is making healthier flour.

Objectives

• To solve problems regarding dietary nutrition of light diet takers.

• To provide an alternative flour.

• To satisfy the people’s desire of having higher quality cakes and breads.

• To help parents feed their babies.

• To spread to other people the health benefits of banana

• To produce a flour out of Saba banana.

• To test the product by making a simple bread.

Significance of the Study

The study opens another way for us to make alternative and more nutritious flour out of banana. The study was conducted as a remedy for the common problem of malnutrition. And it also helps us to gain money when you make this as your business. We can also make some raw materials that we thought to be useless, transformed into a much useful and improved thing.

Scope and Limitations

This study is focused on producing flour from Saba banana. It also deals with the assessment of its actual advantages as compared to some commercialized one. The researchers only test the product by making bread and are not responsible for the success or failure on any other preparations or treatments used with the product.
