Mom's Famous Banana Nut Bread Mom has made this banana nut bread all my life, and it is wonderfully delicious. First she needs all of the ingredients to make this beautiful bread. They include one half cup of butter, two eggs, two cups of flour, one quarter cup of chopped walnuts, one cup of sugar, three over ripe bananas, (preferably the peel being black in color), half a teaspoon of baking soda, and half a teaspoon of salt. She will also need a loaf pan that measures, nine by five by three. Upon completion of this bread, mom will have a golden, moist, delicious loaf of banana nut bread. Next mom begins the process of mixing the batter. She creams together the one half cup of butter along with the one cup of sugar and the two eggs in a large bowl. In a smaller bowl, she places the over ripe bananas and mashes them until they are smooth and creamy. She mixes the bananas into the large bowl with the butter, sugar, and eggs. Next she will begin to add the flour in small amounts at a time and mixes this together with the rest of the batter. Approximately half a cup at a time, until the entire two cups have been added. A personal favorite of mine is just plain vanilla. Another favorite of mine is to slice it, toast it, and generously spread cream cheese on top. Freddy likes to use the banana nut bread as a substitution for graham crackers to create a banana nut smores.
