Project Title: Making of Malunggay Salad and Lemon Grass Juice

I. INTRODUCTION

2.1 BACKGROUND OF THE PROBLEM

One of the main issues that we have right now is getting the right vitamins and nutrients to our body. How we will do this is by choosing the food that we eat. Aside from that, we have to take consideration its cost. Can Filipino, in all walks of life, afford a healthy meal?

More Filipinos have been eating rice just to withstand empty stomach rather than eating a balanced meal with the right amount of calories and protein. Survey also says that eating protein and vegetables have gone down the sink since, most of the families can’t afford it. Most of the Filipino families eat rice with salt, soy sauce or even coffee. If you are lucky enough, then, rice with noodles. But come to think of it, yes, you get a feeling that you are already full, but do you have the right amount of vitamins that you need for the whole day?

2.2 OVERVIEW OF THE CURRENT STATE OF THE TECHNOLOGY

Department of Agriculture, have announced that the malunggay is considered a natural nutrition for the tropics because of the amazing benefits derived from its small leaves that have an extraordinary role in health and well- being. There were a lot of products introduced with the use of malunngay leaves. There are, moringa supplements (in capsule form), malunngay noodles, malunggay energy drink, malunggay coffee, malunggay bread, malunggay sandwich spread, malunggay soap and a lot more.

And since recent studies show that lemongrass has anti-oxidant and disease preventing properties, there are lemongrass teas, soaps, oils and many other beauty products.

2.3 PROJECT RATIONALE

Admit it, nowadays, we seldom eat vegetables and neglect its nutritional value. In a vast changing world where everyone is always on the go, we eat something that is ready made and what is convenient and set aside the effects that it can cause us. Its either we are considered overweight or malnourished.

The lowly malunggay and lemon grass may not be top of mind when it comes to vegetables, but these leafy green veggies boasts of many health and medicinal benefits. Malunggay leaves are loaded with nutrients. Gram for gram, malunggay leaves also contain two times the protein in milk, three times the potassium in bananas, four times the vitamin A in carrots and seven times the vitamin c that you will get from oranges. Tender malunggay leaves also reduce phlegm and are administered internally for scurvy and catarrhal conditions.

Lemongrass has many health benefits and healing properties containing many compounds, oils, minerals and vitamins that are known to have anti-oxidant and disease preventing properties. The primary chemical component in lemongrass is citral which has strong anti-microbial and anti-fungal properties. Lemongrass therefore inhibits microbial and bacterial growth in the body, both internally and externally, helping to prevent and cure bacterial infections in the colon, stomach, urinary tract and respiratory system. Its leaves and stems are high in folic acid and essential vitamins such as pantothenic acid (vitamin B5), pyridoxine (vitamin B-6) and thiamin (vitamin B-1).

Lemongrass also contains many anti-oxidant minerals and vitamins such as vitamin C, vitamin A, potassium, zinc, calcium, iron, manganese, copper, and magnesium.

II. PROJECT DESCRIPTION

3.4 PROBLEM STATEMENT

Almost all over the world, we have an issue with malnutrition. It refers to both undernutrition and overnutrition. Individuals are malnourished, or suffer from undernutrition if their diet does not provide them with adequate calories and protein for maintenance and growth, or they cannot fully utilize the food they eat due to illness. People are also malnourished, or suffer from overnutrition if they consume too many calories.
