ABSTRACT

Listeria monocytogenes is an important foodborne pathogen which can cause foodborne listeriosis with high fatality rates compared with other foodborne microbial pathogens. The purposes of this study are to determine the prevalence of L. monocytogenes in chicken offal such as gizzard, liver and heart, investigate the efficacy of handling practices such as washing methods and cooking time in decontamination of L. monocytogens in chicken offal, and assess the characteristics of the L. monocytogenes strains isolated from chicken offal based on antibiotic resistant profile. At the end of this research study, the generated data can use to develop a quantitative risk assessment model in which the exposure and risk of acquiring listeriosis from consumption of chicken offal are estimate. Hence, it will provide risk assessment report and surveillance data to Food Safety and Quality Division under Ministry of Health Malaysia to look into the biosafety level of chicken offal in Malaysia thereby raise awareness among the Malaysians on consumption of chicken offal. On the other hand, preventive measures such as washing and the ways of cooking food materials have been seen to play an important role in the reduction of surface bacterium. Variability in handling practices performed by different individual greatly influences the growth and survival of this kind of bacterium. Hence, studies on various handling practices can be carry out to investigate the efficacy of various practices in microbial reduction and removal thereby suggest the most efficient handling methods in reduce the microbial load of L. monocytogenes in chicken offal.
