Abstract

This study is aimed to determine the feasibility of the papaya (carica papaya) skin extract to become a meat tenderizer. This means that the extract taken from the papaya skin, whether it ripe or unripe, may be effective if used as a tenderizer for meat. The proponents aim to develop an organic meat tenderizer for the safety of the consumers. However, the research is only limited to the beef and pork. According to the gathered data, the papaya skin’s extract is effective in tenderizing the meat. It is even more effective than mechanically tenderizing the meat. The pounded meat became less appetizing instead of making it more enticing. The cause for the meat to become tenderized is the enzyme present in the papaya skin extract. The term used for this enzyme is papain. During the experiment, the ripe papaya skin was sliced then extracted. The same procedure was followed with the unripe papaya skin. The extracts are separated in a bowl. The extracts were applied to two different sets of meat, the beef and pork. The beef and pork were also pounded. Another set was set aside as the control variable. The result shows that after 15 minutes, the meat and pork were tender. When they were cooked, they were still tender and ready to eat. The papaya skin extract did not change the taste of the meat. Thus, the cooks and the housewives will be truly benefited because of this study. They will be able to afford a meat tenderizer that is safe and organic.

    The papaya leaves used in mulching is a small tropical tree with a straight stem marked by scars where leaves have fallen directly from it. Papayas do not have branches. The papaya fruit is pear-shaped with a bright golden-yellow skin. The flesh of the fruit is a brighter orange-yellow, juicy and silky smooth, with a sweet and sour flavor. A lot of people can be affected by this disease yet not all of them have the access of expensive and artificial treatments. The researchers are urged to discover a natural and effective for stopping tumour vascularisation. In this study, the pericarp of the Calabash (Crescentia Cujete) is utilized as an effective treatment for stopping tumour vascularisation.The obtained 457g of Calabash Fruit pericarp was soaked by solvent extraction using 1.5L 95%-Hexane and 1.5L 95%-Ethanol for 24 hours each. The extract was filtered and evaporated using rotary evaporator for 3 hours and further dried for 24 hours. The residual crude extract was poured in a glass container. The extracts were tested through Chorioallontoic Membrane Assay (CAM).The CAM Assay gave the following results. The mesh indices of the different concentration (25%, 50%, 100%) of the extracts, and the positive and negative control were the following: 285.663, 280.534, 166.008, 176.162, and 244.049.The result of the Chorioallontoic Membrane Assay showed that the extract showed no significant difference to the positive control so it is showed that the extract also has anti-angiogenic effect to the chick embryo. The anti-angiogenic property only shows when 100% concentration (dose-dependent) of the extract is injected to the egg. The researcher concluded that the Calabash Fruit Pericarp has anti-angiogenic effect thus having the potential of halting tumor vascularisation.…
