I have never really been one to pay attention to my over all eating habits until I started
taking this class. I have such a busy life taking care of three children, working and going
to school full-time it just seemed hard to balance it all. I grew up with a very large family
who all lived under the same roof, mom, dad, brothers, sisters, aunt and uncles not to
mention my grandmother and grandfather. My grandmother cooked three square meals a
day and many snacks in between. I'm not talking about healthy meals, these were
homemade rolls, homemade mashed potatoes, pasta and all the fattiest foods you could
ever imagine. Years after my grandfather passed away my grand mother remarried to a
Mexican man. So we had a new cook in the house, and full blooded Italian and a
Mexican who were cooking night and day. We had everybody lined up down the kids in
the neighborhood, to all animals lined up at the door. It was like a mad zoo!!! Another
wards eating healthy growing up was something no one knew about it. All we knew is
that is was wonderful food and we eat plenty. I guess through learned behavior I am
doing the same things with my own children I guess we could call that learned behavior.
As I started this class I began to take a look at all the people in my family and their many
health concerns. Almost everyone except the children and myself suffer with high-
cholesterol, obesity, heart condition and Type1 and 2 diabetes. So I believe... [continues]
