Food Security

“Most of us live in a food secure environment where we don’t worry about having enough to eat. Unfortunately, that is not true for everyone.” According to the United States Department of Agriculture, food security relates to quantity and availability for an active and healthy life style. (USDA ERS, 2013) Today there is an enormous availability of food, at a great variation of quality and costs. There is always an overwhelming amount of food options. However, there is not as much information about the quality of most available foods. The source of foods and it’s ingredients are not always known, and often come from different states, and even countries. In addition, there are many laws and regulations that allow for food companies to print misleading information on food packages. For this reasons, although the information about the importance of high quality food reaches a significant part of the population, most people still find it difficult to follow a healthy diet. My personal experience to keep up with high quality, nutrient dense foods has changed through my childhood and adulthood. There are different factors which contributed to the progressive changes in my eating habits, as I fell into the tricky habits of low nutritional levels meals. This written assignment will discuss the food security issue in the modern world today.

In the modern capitalist world, much thought is given to maximize the production of food. The staple crops, which compose most of the world’s diet today are corn, soybeans, wheat and rice. These crops gained popularity for it’s low cost, and abundance in derived foods. Most derived foods, of such crops, are usually very low in nutrients, but high in carbohydrates. In contrast to low nutrient dense foods, the term organic food, is becoming increasingly more popular. This term refers

By typing into their computer or smart phone, anyone can queue up several dozen locations of where they can purchase a wide variety of products based on ever-changing interests and tastes. The conventional market stores evolved as geographically condensed collections of specialty shops selling produce, butchery meats, dry and canned goods.     In the book, In Defense of Food: An Eater’s Manifesto, author Michael Pollan commences his tale with a few straightforward words: “Eat food. Not too much. Mostly plants”. In his introduction, An Eater’s Manifesto, Pollan discusses how the dietetic wisdom that was passed down from older generations has been heavily tainted by “nutritional science and food industry marketing” (Pollan, 2008). The first volume of the book entitled, The Age of Nutritionism”, delves into this problem and helps uncover the cause of today’s “nutritional confusion and anxiety” (Pollan, 2008). Nowadays, it is not uncommon to have “edible foodlike substances” displayed in every aisle of the grocery store with all products promoting some kind of nutritional benefit from their consumption. These dietary facts are often modified to showcase dietary benefits that are barely present in the food product, if present at all. With such prevalent misinformation, today’s society has become so overly concerned with nutrient enriched food that people have either forgotten or are unaware of the importance of the fundamentals. Pollan further explains that humanity has become “a nation of orthorexics” meaning that people have developed “an unhealthy obsession with healthy eating” centred on the theory of nutritionism (Pollan, 2008). Chronic diseases that have the highest death rate such as obesity, coronary heart disease, diabetes, stroke, and cancer, can be attributed to the “Western diet” which consists of “highly processed foods and refined grains; the use of chemicals to raise plants and animals in huge monocultures; the superabundance of cheap calories of sugar and fat produced by modern agriculture; and the narrowing of the biological diversity of the human diet to a tiny handful of staple crops, notably wheat, corn, and soy” (Pollan, 2008).
