Products and ingridients for pizzeria.
Pizza dough (flour, yeast, sugar, salt, oil, („dry storage”) water) - Prepared pizza dough balls must be stored at 5 °, clean and dry plastic boxes, covered with plastic wrap and marked dates, „Best by” – aprox 48h, if the pizza dough is not used at the time it over-curdl’s and is no longer usable.
Pizza tomato sauce – (tomatoes in their juice, tomato pasta, sugar, salt, vegeta, black peppers, oregano („dry storage”), water, onion, garlic, carrot juice, carrot thicnesses.) After cooking, the pizza sauce is placed in clean plastic boxes and held in vacuum, boxes stored in the refrigerator (used by – long time). Must take out boxes from fridge by „put last, take first” principle, after opening the vacuum box we blender the sauce and than its – used by – aprox. 48h, storage at fridge - 5 °. Opened box must cover with plastic wrap and mark dates.
Cheese- mozzarella, parmesan, bree, grana padano, dor blue, cambazolla, feta, goat cheese. Doesnt matter which cheese, must check time limits of producer, opened package must cover with plastic wrap and marked dates.
Vegetables –
1. Fresh- Tomato and cherry tomato, champignons, zucchini, salads,blue onions, spinach, rucola, dills, spring onions. All vegetables should be carefully washed, peeled and sliced if necessary. Must be stored in clean containers, at the fridge. 5 °. Covered with plastic wrap and marked dates.
2. Pickled or canned vegetables - sun dried tomatoes, marinated sweet peppers, green and black olives, marinated cucumbers, artichokes, red beans, marinated pineapples, jalapeno, (Unopened packages may be stored in dry storage), must check time limits of producer, opened package must cover with plastic wrap and marked dates, must be stored at the fridge 5 °.
3. Balsamic marinated italian vegetables (zucchini, eggplant, sweet peppers) (is placed in clean plastic boxes and held in vacuum, boxes stored in the refrigerator (used by – long time). We take out boxes

Let this rest for 10 mins to allow the yeast to activate. After the timer goes off add 2 ½ cups of flour and 2 tsp of salt, knead the dough until it starts to stick to itself and not the bowl. Then place it in an oiled container for 2 hours to rest. After two hours the dough is ready to cut in half and shaped into pizza crust. We refrigerator one half of the dough so we can have pizza later in the week. Shape the dough by working it with your hands, press it outward to slowly shape a circle. If you are not comfortable tossing the dough just use a rolling pin. Be careful not to overwork the dough or it will tear. Set that aside. Now we are ready to make the pizza sauce. Use 1 standard can of diced tomatoes and drain off the excess liquid. Pour into a blender and add 1tsp salt, 1tsp ground pepper, 3 garlic cloves, 1tsp lime juice, and 1tsp of our everything spice. Once the mixture is fully blended you are done! Now slice or grate your preferred cheese, we like mozzarella on our pizza.…
