COOKING COCONUT RICE
            With the present economic crisis in the country, many families have resorted to cooking their meals at home and eating out less. Homemade meals like the coconut rice have not only saved the families money, but have also helped them to eat healthier with the required ingredients for a balanced diet. I recall sitting beside my grandmother as a little girl watching her cook coconut rice for her women’s village meeting. Since then, I have always looked forward to and enjoyed cooking it for my family, especially for my first, because of the huge excitement on his face each time I contemplate cooking the dish.   This African communal kind of dish is usually served when families come together to celebrate. There is nothing compared to a family gathering around the dinner table over a delicious meal.   Thus, cooking coconut rice provides a cheaper and nutritious way to feed a family, starting from gathering the ingredients to cooking and serving the dish.
            In order to prepare this meal, you will usually go to a neighborhood shop like Wal-Mart or to the farmers’ market (if you prefer fresh ingredients straight from the farm) to buy the following ingredients: coconut, rice, green pea, carrot, corn, fresh pepper, shrimp, and magi (Traditional African spice).   Other ingredients are ground beef, chicken, fresh fish, and ripe plantain.   Conservative estimate for the purchase of the above listed ingredients would cost less than $30 to prepare this...
