Cake and Tsp Vanilla Essence
MUFFINS
Ingredients
2 cups – self raising flour
1 cup – sugar
100g – butter
1-1/2 cup – milk

Flavour
a. Banana (mashed)
b. Coconut
c. Mixed fruits
d. Chocolate

Method
1. Mix flour and sugar
2. Add butter
3. Add milk, mixing well
4. Add flavour (mix well)
5. Place in a greased mould & bake at 180◦-200◦ for 20mins or until brown

DONUTS
Ingredients
400g – normal flour
6 tsp – sugar
6 tsp – yeast
1 tsp – salt
40g – butter
1-1/2cup – milk

Method
1. Mix flour, sugar, salt & yeast
2. Add butter
3. Finally add milk to form dough
4. Knead until smooth
5. Rest for 5-10mins
6. Roll for about ½ inches thick
7. Cut into a required size with a cutter
8. Let rise for 5-10mins or until double in size
9. Heat deep fryer to 380◦
10. Drop donuts in oil
11. Turn as they rise to surface and show colour
12. Fry for about 2-3mins or until completely brown on both sides

PIZZA
Ingredients
2 cups – normal flour
2 tsp – yeast
1 tsp – salt
3 tsp – sugar
30g - butter/ olive oil
½ cup – water

Method
1. Mix flour, yeast, salt & sugar
2. Add butter or olive oil
3. Add water to form a dough
4. Knead until smooth
5. Rest for 5-10mins
6. Roll out the dough into the required size
7. Spread tomato paste on the base
8. Spread filling
9. Finally sprinkle with grated mozzarella or pizza cheese
10. Let rise for 5-10mins or until double in size and bake at 200◦-250◦ for 20mins

PINEAPPLE UPSIDE-DOWN
Cake Mixture – Ingredients
150g – butter
150g – sugar
3 – eggs
150g – normal flour
1tsp – b/powder
1tsp – vanilla essence

Method
1. Beat or whisk butter & sugar until light & creamy
2. Add egg one at a time
3. Mix flour & b/powder then add into the mixture and mix well
4. Add vanilla (mix well)
5. Grease a cake tin, sprinkle over the brown sugar, a few flakes of butter & place slices of pineapple on top
6. Pour cake mixture over, bake at 150◦ for 45mins or until skewer comes out
