Mario opened his pizza parlor in 1950 in Palm Springs, California, it is located in an indoor mall and called Mario’s Pizzeria (University of Phoenix, n.d). Mario’s restaurant became popular for its taste and fresh ingredients. Recently, customers have expressed being dissatisfied with long wait times and management noticed people leaving without being serviced. Average waiting time is 7 to 9 minutes during peak times and customers typically arrive in groups of 2’s and 4’s (University of Phoenix, n.d). Management must find a way to improve its operational processes and wait times, all while maintaining quality. In this paper, I will discuss points of process performance data for Mario’s Pizzeria, apply the learning curve concepts to test the alternative against the existing process, and discuss how good the initial process data was.
Points of Process Performance
We have all heard the cliché that time is money. And Mario’s Pizzeria is missing many opportunities to make money; one way the pizzeria can increase customer satisfaction and sales is to decrease customer wait time. In the pizzeria, there are 14 tables of 4 and no tables for 2.The process data time for the pizzeria is 53 minutes. From the time the customer enters the door at 6:30 p.m., he doesn’t leave until 7:23 p.m. There was an 11 minute wait time for the customer to be seated and 2 minutes between the customer being seated and the order taken. At 6:46 p.m., the order was processed and 2 minutes later taken to the kitchen. At 7:01 p.m., the customer was serviced and by 7:19 p.m., the customer had finished eating, paid the bill and was exiting the pizzeria at 7:23 p.m.
Alternatives
Long wait times have affected queue lengths, sales, profits, and operating cost. To improve efficiency, several changes were made; the first change was changing the distribution of tables. There are now 10 tables for 4 and 8 tables for 2. This led to enforcing the... [continues]
